Jazz up your Boxing Day Bubble and Squeak with our flavoursome traditional onions
Method
1. In a bowl, roughly mash the potatoes and oil together with the back of a fork. Mix in the onions, cabbage, sprouts and/or green beans, carrots or peas, chilli sauce and Worcestershire Sauce. Season with pepper.
2. In a large frying pan, dry fry the bacon for 2-3 mins, until crispy, then add the potato mixture and stir fry for 4-5 mins, until cooked through.
3. Add 100ml water or any leftover gravy, and cook for 1 min.
4. Make a hole in the mixture on one side of the pan with a spoon and crack one egg into it. Repeat with the second egg on the other side.
5. Drizzle with olive oil and sprinkle with pepper, then cover with a lid and cook on a low heat for 2 mins or until the eggs are cooked to your liking. Serve.
